During my stay in Banff, I decided to have lunch at Nourish Bistro, a well-known vegetarian restaurant that lots of people had recommended. Now, I’m not vegetarian, but at the time, most places in the area were packed for lunch, and their food did look good. I do enjoy vegetarian and vegan food every now and then, as long as it’s tasty.
I ordered the Trio of Dips, which came with beet hummus, garlic hummus, and baba ghanoush, plus a generous serving of raw veggies and toasted pita. For a bit of extra protein, I added the char siu tofu. The dips were flavourful and well-balanced, and the tofu had a nice texture and seasoning that worked perfectly with the rest of the plate.

Honestly, the portion was bigger than I expected. It was more than enough for one person, and I left feeling full and satisfied. The ingredients tasted really fresh, and it was a nice break from all the heavier food I’d been having during the trip.
If you're in Banff and looking for a vegetarian-friendly option that doesn’t skimp on flavour or portions, Nourish is definitely worth checking out. It has a cozy, laid-back vibe and makes a great spot for anyone craving something fresh and plant-based, or just a healthy, satisfying meal that tastes great.
